Change your account information from external to internal, i.e. yourmaildomain.com to yourADdomain.local. Change on the scan account as well as the email addresses.

This is a little dated, and I hope you have found your solution already, but for everyone else:
Press the # button Use the directional pad to scroll over to the @ symbol. When It is underlines press OK
To insert a ., press the * symbol, scroll over until . is underlined and do the same as above.
