If this is the same Stamina R360 as I have, you just hold down the orange oval button (labeled: MODE) until you hear a beep. This resets the readings.

Hello

Open the brake arm quick-release or (if lacking a quick-release) lifting the cable from the body of the brake. The quick-release will be a small lever located on the side of the brake. Other brakes, such as V-brakes (commonly found on mountain bikes), may not have a quick-release, in which case you may be able to squeeze the brake arms together and lift the cable from its anchor inside the brake this releases the tension and makes it easy to access the brakes.

Restore tension on the brake by closing the quick-release lever or (depending on brake design) reattaching the cable to the brake.

SOURCE: I have a Stamina 4700R

This is the main SITE for your unit, yet it appears to be an older unit, you can browse thru and maybe you'll find something similar to what you have and use that manual instead of the one you have. It probably won't be very much different from yours. As for parts, there are links on the page to find what you need.
Hope this is of help, Please rate and comment, Thank You
