One of the necessary files might have gotten deleted. If possible, I'd suggest attempting to reinstall entourage. If there's nothing dire that you would lose, or if everything is saved on mail servers (such as gmail or hotmail or something) it might be worth giving mail.app a shot, if that's an option.

has links for downloads, depending on which version you have, downloading a trial for installation purposes and re-entering your serial might solve problems you might be having.
If reinstalling isn't possible and you absolutely have to have what was in your entourage, some of your information could be saved in
/Users//Documents/Microsoft User Data
I don't use entourage personally so I'm not an expert on it.
They also stopped shipping Microsoft Office for Mac with entourage, the latest version with it is 2008, the Home and Student editions of Office 2011 for Mac do not come with a mail client at all, the business edition comes with Outlook.
Hopefully that helps a little bit.
But like I said, I don't use entourage or else I'd probably be able to offer a more concise solution.
